Ube Monggo Cheese Pandesal

Filled with sweet munggo and creamy cheese, it’s the perfect bite for breakfast, merienda, or gifting!

DOUGH INGREDIENTS

• 10 g Elufa Instant Dry Yeast

• 10–15 g Elufa Ube Flavorpowder

• 1000 g Bread flour

• 5 g Bread improver

• 20 g Milk powder

• 160 g White sugar

• 10 g Salt

• 100 g Whole eggs

• 500 g Water

• 20 g BOS (butter oil substitute)

• 40 g Shortening

UBE STREUSEL TOPPING INGREDIENTS

• 5–8 g Elufa Ube Flavorpowder

• 100 g Bread flour

• 60–70 g White sugar

• 75 g Margarine

• 100 g Milk powder

FILLING INGREDIENTS

• 15 g Dauyong (mung beans), cooked, mashed, and sweetened

• 5 g Cheese (cheddar or quickmelt, cubed or grated)

Procedure

1. Mix bread flour, yeast, bread improver, milk powder, and Elufa Ube Flavorpowder.

2. In another bowl, dissolve sugar and salt in eggs and water.

3. Add wet mix to dry ingredients. Mix on low speed for 2 minutes.

4. Add shortening and BOS. Mix for another minute.

5. Knead at medium speed for 5 minutes or until dough is smooth.

6. Transfer to a greased bowl, cover, and let rise for 1 hour.

7. While proofing, cook and mash sweetened mung beans. Prepare cheese.

8. Mix streusel ingredients in a bowl until crumbly. Set aside.

9. Punch down dough and divide into 50–60 g portions.

10. Flatten each dough, add munggo and cheese, seal and shape.

11. Arrange on a tray, cover, and let rise for 30–45 minutes.

12. Top with ube streusel and bake at 170–180°C for 15–18 minutes.
