Ube Matcha Pandesal

Our take on Ube Cheese & Matcha Pandesal combines the soft sweetness of ube-infused bread with a rich, slightly bitter matcha filling for a perfectly balanced bite. Made with Elufa Instant Dry Yeast and Elufa Ube FlavorPlus, this recipe delivers a fluffy texture, vibrant color, and bakery-quality aroma—finished with a cheesy center for that familiar Filipino comfort.

Ingredients

Dough

2 tsp Elufa Instant Dry Yeast (6g)

3 tsp Elufa Ube FlavorPlus

1 large whole egg

¼ cup Sugar (50g)

1 cup Fresh Milk, lukewarm (240ml)

2 tbsp Vegetable Oil (30ml)

3 cups Bread Flour (405g) or APF

½ tsp Salt (3g)

Filling

Elufa Matcha Filling

Cheese cubes or slices (for stuffing)

Procedure

  1. In a bowl, combine egg, sugar, Elufa Ube FlavorPlus, Elufa Instant Dry Yeast, and lukewarm milk. Stir until sugar dissolves.

  2. Add vegetable oil, bread flour, and salt. Mix until a dough forms.

  3. Knead until smooth and elastic. (The dough may be slightly sticky; lightly oil your hands or dust with flour as needed.)

  4. Place the dough in a lightly oiled bowl. Cover and proof for 1 hour or until doubled in size.

  5. Divide into 20 equal pieces (about 35–40g each).

  6. Flatten each piece, add cheese and Elufa Matcha filling in the center, then seal tightly.

  7. Arrange on a lined baking tray. Cover and rest for 20–30 minutes.

  8. Bake in a preheated oven at 180°C for 20–25 minutes or until lightly golden.

  9. Cool slightly before serving. Enjoy soft, fluffy pandesal with a sweet-ube and bold matcha surprise inside.
